I liked the story, but there is one glaring error. You described is closer to making beer
To make wine: 1. Harvest grapes, wash and crush ...Add juice to fermenter and let ferment naturally ...for 6-12 hours 2. Add wine yeast to fermenting juice 3. Allow to ferment for 10 – 30 days [longer yields ...a dryer wine] 4. Clarify the wine drawing off liquid and ...filtering into another vat 5. Siphon wine into cask for aging 6. Age in cask for 6 months then bottle
Malt is used only in making beer or whiskey.
